No longer just a specialty liquor for only the most hardy of drinkers, tequilas have risen steadily in status over recent years and are now seated on the top shelf alongside other fine spirits such as Cognac and Scotch. Scientists have even discovered a method of turning tequila into diamonds. True story, but we will save that for another day. The history of tequila is a combination of fact and folklore. Whether the stories are myth or reality, they add to the appeal?of this “nectar of the gods.”

First, to be called tequila it must be produced in Mexico and Tequila Herradura is one of the oldest and most respected producers of tequila (since 1870). Herradura is the only tequila approved by the FDA to claim “all natural” and the first 100 percent agave tequila ever to be imported into the United States.

The process to produce this spectacular tequila starts with the Weber Blue Agave, a succulent plant related to the lily. It takes about 17 pounds of agave to produce one liter of tequila. Only the agave heart is used which can weigh anywhere from 80 to 200 pounds. The heart, or pinas, is stripped of its leaves by the harvester, who is called a jimador, and cooked in clay ovens to convert the starches to sugars. From here the fermentation starts and lasts up to 96 hours for a more full-flavored tequila. With Herradura, only natural yeasts are used in the process giving the tequila an unmatched flavor. Distilled not once, but twice, to preserve only the best of the alcohol, it then is aged in new oak barrels for taste, color and smoothness. The use of reverse osmosis water helps to maintain the purity of the tequila?s aroma and flavor. Each double barrel Reposado is tasted, approved, and authenticated by the master distiller.
