Wines on Tap Flights allow guests to sample a selection of three Red or three White wines.

Unlike the process of serving wine from a bottle, wines on tap are not exposed to oxidation until the moment they are served, which ensures their quality and keeps their flavor as the vintner intended. In addition to reducing waste and carbon footprint created by serving in individual wine bottles, each of the Rim Bar’s Wines on Tap wines is produced by a winemaker who practices biodynamic, sustainable or organic procedures in their production methods.

This month’s white wine flight features Trefethen Chardonnay, Silvertap Chardonnay and Franciscan Chardannay. The white series is priced at $14.

Trefethen Chardonnay: This Chardonnay highlights tropical and floral aromas with a hint of almond. Light flavors of apple pie and citrus especially that of lemon zest, fill the palate of this rich and well-balanced wine. It has a soft mouthfeel balanced with acidity and a stony minerality which makes this a very food-friendly wine.

Silvertap Chardonnay: Flavors of lemon peel, vanilla extract, honeydew melon and wood spice on the nose. Ripe citrus fruit flavors of grapefruit and nectarine are followed by a hint of lemon cream pie and balanced with a bright acidity that carries through to a crisp clean finish.

Franciscan Chardonnay: Barrel fermented and aged seven months sur lie in small French and American oak barrels, this 100 percent chardonnay wine has the aromas of Meyer lemon, Bartlett pear and crisp apple mingle with hints of vanilla and mineral notes.

The latest red wine flight, which includes Darcie Kent Sauvignon, Saintsbury Pinot Noir and North by Northwest Blend, is available for $18.

Darcie Kent Cabernet Sauvignon: This bold Cabernet is driven by ripe cherries and black olive flavors, with a cedar and tobacco nose. The flavors are rich and packed with soft round tannins and finish that lingers long with tobacco and spicy vanilla notes.

Saintsbury Pinot Noir: Described as “the most romantic of wines,” this wine tends to be of light to medium body with aroma reminiscent of black and/or sour red cherry, raspberry and spice in a vibrant and elegant wine.

North by Northwest Blend (NxNW): This blend of Cabernet and Syrah begins with an aroma of toast, blackberry, mint, tobacco and leather. The flavors are a pleasant balance of cherry, cinnamon, raspberry, smoke and menthol. The mouthfeel is dry and firm with gentle acidity.
